clever! I was thinking of using this method as a stem for the top of a beret, join stitches 3 and 1 and increase from there

Yep, you can definitely use it for that! You could start by picking up 3 stitches at the bottom of the hat, but then you'd have to keep turning the hat around and around with every few stitches you make... I'd suggest you just make two i-cords in the same way as I demonstrate in the video, and then stitch them to the hat afterwards.
